Making Mock Cupcakes
So you're probably asking yourself, "What in the world is a mock cupcake?"

Well a mock cupcake is a cake pretending to be a cupcake
I just made up the name, basically it's a piece of cake, or layers of cake cut out into a round shape and presented in a cupcake case.

I came up with these when I had a failed cake and decided that cake balls just wouldn't do. They were a huge hit with hubby, and my co-workers, so I decided to bake a cake especially for my next batch.
What you'll need

  • Cupcake Tray
  • Cupcake cases
  • A cake ( a ruined one will do just fine)
  • Ganache (Add 3-4 tablespoons more of cream to what you'd normally use, as we need this to be soft even after it sets - because I haven’t made these many times, I don’t have a good recipe yet, I will post it when I come up with a good one)
  • Some sort of decoration.
Step 1
Layer your cake as thinly as you want. This one was done in 3/8 of an inch layers. You can just do one layer if you don't want that much ganache. The first ones i did were just one layer and they were delicious too.

Choose a round cutter that fits perfectly into your cupcake tray. Cut out the cake into circles.
Step 2
Place one layer of cake in the cupcake cases.

Step 3
Cover all the bits of cake with a thin layer of ganache.

Step 4
Place another circle of cake on top.

Step 5
Cover second layer of cake with ganache.
Step 6
Put the third layer of cake over the ganache and cover with ganache.
Step 7
Decorate as desired. I decorated these for a friend of mine at work.
