Choc Peanut Butter Cupcakes

Ingredients
150gms Crunchy Peanut Butter (UNSALTED)
250gms Butter
1 cup of milk (250mls)
440gms granulated sugar
150gms self raising flour
100gms plain flour
50gms cocoa
2 large eggs
80mls whiskey (whiskey is best as it cuts the sweetness down a little and adds nice !HIC! flavour )
preheat oven to 180 degrees Celsius

Method

  1. Put peanut butter, butter, milk and granulated sugar in a heatproof bowl, and melt in microwave or on a double boiler.
  2. Sift cocoa, and flours together, set aside.
  3. Whisk eggs and then add to liquid mix. Whisk in whiskey.
  4. Whisk in flours, pour in patty pans, lower oven temp to 160 and bake for approximately 30 minutes.

makes 25-30 cupcakes

TOPPING
Melt 400gms chocolate
1/2 cup milk
100gms unsalted crunchy peanut butter.
Allow to cool a little, then pour a tablespoon or so over each cupcake.
(I actually made double the amount of peanut butter ganache BUT i think it's going to be too much, i only managed to ice 3 and i've left the others for later)
