White Chocolate Chip Cupcakes

Ingredients
100gms butter softened
100gms margarine
400gms castor sugar
4 eggs
1 1/3 cup of plain yoghurt ( i used greek style which is really creamy)
430gms self raising flour
50gms cocoa
150gms Callebaut white callets

Method
  • Preheat oven to 180C
  • Sift flour and cocoa together
  • Cream butter/marg and sugar, add one egg at a time, ensuring each one is thoroughly incorporated into the mix before adding the next one.
  • Add flour and yoghurt, mix well (same as you would add flour and milk on a butter cake)
  • Fold in the callets
  • Pour into patty cases, and lower oven temp to 160C (fan forced) , and bake for 20-25 minutes. Test after 20 minutes by inserting a toothpick/skewer into the center, if it comes out clean, they're ready.
